Berry Cobbler

Ingredients:

  • 1 cup pecans
  • 1 cup rolled oats
  • 1/2 cup almond meal ( or flour)
  • 1/2 cup coconut flakes
  • 1/4 tsp cinnamon
  • 6 Tbsp olive oil
  • 1/3 cup maple syrup or honey
  • 4 cups fresh blueberries (We used 1/2 raspberries and 1/2 blueberries)

Directions:

Preheat the oven to 350 degrees. Mix together the pecans, rolled oats, almond meal, coconut flakes, and cinnamon in a bowl. Once mixed, then add the olive oil and syrup or honey and mix well.

On the bottom of a greased 8″x8″ pan put 4 cups of berries then pour the mixture on top of the berries. Bake for 25-35 minutes or until top is golden brown.
