Ingredients:
- 2 cups melted butter
- 2 cups powdered sugar
- 1 cup white sugar
- 2 eggs
- 2 tsp vanilla
- 1 tsp lemon zest
- 1 tsp baking soda
- 1 tsp cream of tarter
- 4 1/4 cups flour
- 1 tsp salt
- 1/2 cup white sugar (in a small bowl for rolling)
Directions:
Melt butter. Add sugars & mix. Let cool to room temperature & mix in eggs, one at a time. Add vanilla, lemon zest, baking soda, salt & cream of tarter. Mix well. Add flour in increments, mixing after each addition.
Chill dough for at least an hour (over night is fine).
When you are ready to bake, preheat oven to 325 F & place rack in the middle of the oven.
Use hands to roll dough in walnut-sized balls. Roll in white or colored sugar. (Mix white sugar 2 parts to 1 part with colored sugar.) Place 12 on a greased standard cookie sheet. Flatten balls with a greased spatula.
Bake for 10-15 minutes. Cool on sheet for 2 minutes, then remove to rack to finish cooling.
Baker’s Note: This dough is meant to be rolled. It does not work well for cut outs.
